Fruit Pizza (aka dessert)

Look at the beautiful fruit pizza I (meaning Steven) made to take to work today:

Because if you can’t indulge and eat something bad for you on your birthday, when can you?!*

Steven and I laugh every time we talk about fruit pizza, because we think the title is a bit misleading – it makes it sound healthy! I mean, it almost looks healthy from the picture, right?

Well, I (meaning mostly Steven) just made it… and can tell you, there are a lot of hidden sweets in there that are adding on calories. But damn, it is going to taste so good… let me know if you want the recipe!

*And by eating something bad for you on your “birthday,” I mean your birthday, as well as the weekend that follows it, when your family is coming to visit and it is going to be a big fun, stuff-your-face party (Hopefully. God. Why else would I have been eating healthy all week?!).

    I love fruit pizza and it is all about the cream cheese with sugar and cookie dough that is on the bottom (or at least that is how we make it LOL)!!! Enjoy your pizza girl!!!!

    Here is the recipe for everyone (I did not add the editorial comments – that is how I found them in the book):

    Fruit Pizza

    1 (18 oz.) pkg. Pillsbury sugar cookie dough
    4 oz. cool whip
    1 (8 oz.) pkg. cream cheese
    1/3 c. powdered sugar
    1 T. vanilla
    Fruit of your choice (I usually use strawberries, kiwis, bananas, mandarin, oranges & pineapple)

    GLAZE:
    Β½ c. sugar
    2 T. cornstarch
    Pinch of salt
    Β½ c. water
    Β½ c. orange juice
    Β½ c. lemon juice

    Slice cookie dough 1/8-inch thick. Put on lightly-greased large pizza pan or cookie sheet. Bake at 350Β° for 10 to 12 minutes; cool. Blend cream cheese, cool whip, powdered sugar and vanilla, and spread over crust. Place fruit on cheese mixture (be creative). Starting on outside with strawberries is more colorful.

    For glaze: Mix dry ingredients together, gradually add water and juices, heat over medium heat to boil. Boil 1 minute, stirring constantly. Cool and pour over pizza.

    May use pie filling and other fruits in winter. Grapes are also good on it.

    Nilsa – The glaze on top has corn starch, sugar, water, lemon juice and orange juice in it. It smelled AMAZING when I was cooking it on the stove. The other “hidden” unhealthy gems are the cream cheese/whipped cream base, and … the fact that the “dough” is a big sugar cookie! But it’s SO GOOD!

    sizzle – It is like a little fiesta! Too bad I was taking it to work… and not a fiesta! Ha ha πŸ™‚

    ajooja – I did feel REALLY guilty cutting the first slice! But then I realized it still looked really cool even when it had pieces missing πŸ™‚

    martymankins – I wasn’t sure if it was a tart or not because it doesn’t have that little ridge on the side. You know what I mean? But I would rather call it a tart than a pizza! Thanks for the birthday wishes πŸ™‚

    Came over by way of JavaQueen to check out your pizza. Happy Birthday by the way. Tart, pizza, call it what you want but it looks divine. I am on weight watchers and can’t have the hidden stuff but I suppose I could design my own with just fruit. When I reach losing 100 lbs which I am 16 pounds away from my daughter is going to give me a 100 pound party and that would make a delicious desert. I could use black cherries, kiwi, strawberries, pineapple and lots of other fruit now that I eat fruit instead of cake, cookies and ice cream.

    JQ14 – They are raspberries on the outside of the kiwi, and strawberries in the center of the pie. πŸ™‚ We used blueberries, raspberries, kiwi, strawberries and pineapple.
