Vegan chili and cornbread

This cold weather has been making me hungry for something warm… like chili!

I found this vegan chili recipe the other day, so we* Steven made it on Monday night. We made the recipe as written, but added 1/2 teaspoon of dried jalapeños. Yum yum yum. It turned out SO GOOD**. I love chili with a lot of beans and this one did not disappoint!

Apparently, cornbread goes with chili? This was news to me, but when Steven asked me to find a recipe for vegan cornbread, I all of a sudden started craving it.

We used this recipe from vegweb, but used 2 tablespoons of milled flaxseed mixed with 3-4 tablespoons of warm water in place of the egg replacer. Oh gosh. Fresh, hot cornbread… drooool. It turned out really good. I am not sure how long the leftovers are going to last.

Do you have staple dishes that you make over and over? We often have soy burger sandwiches or salads for dinner, but once a week, we usually make one of “our dishes” – our “Pad Siew” or refried beans with rice. We end up making these dishes when our family comes to visit too. It would be nice to add chili to that list of “our dishes.”

*I was sent to pick up cornmeal and was in charge of opening the cans of beans when I got back.
**And it made the house smell SUPER GOOD!!!

    Oh yes! Chili and Corn Bread go together perfectly… just like Peas and Carrots or Chocolate Pudding and Golden Oreos!

    Our dishes tend to be seasonal but right now it has been chilli, beef stew and french onion soups.

    I love chili in the fall. There’s so many ways you can make it, and it’s almost impossible to make it unhealthy! (unless you bury it in cheddar cheese, heh)

    Yeah, the cornbread/chili combo is new to me, too! I’m a BIG cornbread person, though, so I think I could roll with it. 🙂

    And I could eat soup OVER and OVER again. I think my new roommate thinks I’m weird because I’m always making soup. What can I say? I like non-solid foods (soup, chili, ice cream….)

    I try to make new things every week, but my usual fall back “I haven’t been to the grocery store in two weeks” meal is spaghetti and meatballs. It’s so easy for me to make a huge batch of meatballs and stick them in the freezer, then just pop a few out when we need them.

    Scott loves chili, so I made it last week and will again tomorrow. Last week I served mine with pumpkin cornbread, which was good.

    Yeah the cold weather (it’s ONLY mid-October!! hellppp!!) is getting me to consider preparing soup — something that rarely happens, I’m usually not a fan of soup! But hot tasty liquid sounds really good when it’s almost freezing outside. Brrr! 😀

    The Chili looks extremely yummy, and simple to prepare too: do you process the beans in any way to avoid the joys of flatulence afterwards? 😀

    The cornbread looks great! I’ll be adding cornflour to the shopping list 😀 😀

    Mmm, I love chili (especially meatless) when the weather turns colder. (And sometimes, when it is not cold.) This weather definitely calls for it. I’m making black bean soup and beer bread soon!

    Though corn bread sounds mighty nice too. 🙂

    If you are a spectator and I am a racer again (and if it’s freakin’ cold), please stand on the side with a cup full of warm vegan chili and cornbread. I’ll sniff it as I go by!

    Cornbread and chili are a perfect meal! I haven’t really been eating corn but damn, some cornbread sounds GOOD. I was just reading this weekend about how you can use flaxseed for substitutions. Yum!

    Heck yeah corn bread and chili! Maybe it’s a southern thing. Oh man, I used to make chili all the time, now I need to learn how to make chili beans from scratch so I can start making chili over here. I also used to use pilsbury corn bread twists because I could use them just like spoon (that quickly disappeared…), but I think they stopped making them and I doubt they’re vegan :(. Your corn bread looks super yummy! When I do make it from scratch or even a mix, I always add some honey to make it just a little bit sweet.

    Oh side note, I’m from Texas and I totally think there should be beans in chili. Chili without beans just ain’t right!

    And i bet it tasted even better since you didn’t have to cook it!

    I make Peanutty Noodles over and over again – I’m out of the ingredients right now though…sad.

    I definitely a lot of veggie burgers, Amy’s Burritos, and Annie’s Mac and Cheese as well. I have to go for the simple and easy these days!
