Dream nachos

We didn’t watch the football game yesterday* but we did make party food – loaded vegan nachos!

Includes: tortilla chips, Teese nacho vegan sauce, Dixie Diners’ Club Beef Not, pinto beans. jalapeños, black olives, green onion and cilantro

We started dreaming up the nachos on Thursday***, spent time discussing them on Saturday, and got the ingredients on Sunday. Ha ha ha. We were kind of obsessed with the idea of them. And they did not disappoint! I could have that for dinner any night… that would be super healthy, no?

Party food is so fun. What is your favorite party food? Or the most creative party food item you’ve seen?

My friend Courtney created this 7-layer dip yesterday! So cool!

And someone super creative made this for the Chicago Running Bloggers Holiday Party in December! Who was it?! I wanted to tell them how clever I thought it was!

I think it would be fun to host an Oscars Viewing Party and see what people bring. Maybe items that were puns on the nominated top pictures, or little golden Oscars. Or maybe pick something from a nominated actor’s specific**** diet. Hee hee.

Oh gosh. Why a post on food so early in the day! Now your comments will be making me hungry all day! I know it! Maybe you’ll give me some creative ideas for lunch… we do have the leftovers for all the nacho items. Hmm…

*Except the half time show – ahhh! My inner high schooler** was so happy to see the Destiny’s Child reunion!
**Don’t really have one – I hate who I was in high school.
***I even emailed my girlfriends about them on Friday.
****Aren’t they all on one?!

Mmmmmm nachos! Love em! Cannot remember for the life of me who brought that cake. I saw her walk in with it too–she came late…did not run…
    I love me some guac!

  2. My roommate made salsa chicken in the crockpot, which we just loaded up on top of nachos and ate our faces off. From what I saw online, it seems nachos were the number #1 party favorite…

Those nachos look yummy and the other dishes are so creative! I once made Thanksgiving dinner cupcakes (blogged about them in Nov) and thought they were pretty creative (and delicious!) And I agree with you on the Destiny’s Child reunion. Wonder if they will do a tour now?! Hmmm!

  4. oh my goodness, your friend Courtney is TALENTED! That looks soooo good!!
I looove nachos!! my fave party food 😀

  5. Erin says:

Nachos have all the right food groups, yes? Perfectly balanced meal.

I really wanted nachos yesterday too so despite making a ton of stuff to take to my friend’s house for the game, I also picked up chips and salsa. She served chili with a bunch of toppings (cheese, peppers, onions) so I made nachos out of it! So good! I made buffalo chicken dip, beer bread, and sugar cookie bars. My signature dish is usually guac though.

Those nachos look so nom-worthy! I want to try them! I love, love, love Courtney’s creative 7 layer dip! Almost too cute to eat…almost. : )

I’ll be over for this Oscar party of yours….you are doing it right..?

I would like to! I doubt anyone would want to go to the burbs on a Sunday night 😉 Erin will already be over that morning for a race though 😉

  9. Anne says:

I’m not saying I love nachos or anything, but I did host a Nachos of the World New Year’s Party one year, with 6 or 7 different types of nachos!

I love pretty much all party food, but I’m especially partial to dips and things wrapped in bacon.

    • kilax says:

I must ask, is the bacon love what brought you and Bob together?! 🙂

      • Anne says:

Haha no, it’s what brought us to the gym together 😉

Our shared love of bacon has definitely gotten stronger over the years, and obviously we plan to eat bacon together for the rest of our lives.

My sis-in-law always hosts an Oscars Party … it would be a hike for you (it’s in the south burbs) but let me know if you’d like an invite! It’s kind of the highlight of my winter (post-Christmas) and the more the merrier! We don’t really do any themed food/drinks other than champagne. But dressing in theme is encouraged (but not required). We used to wear our best “red carpet” gear (old bridesmaids dresses), now we try to dress like characters from nominated movies.

  11. The nachos looks delicious and are making me hungry for lunch already….

This was the first year- in a long long time- that we didn’t watch the Superbowl. The beach was calling us during the first half, but we came back to watch Beyonce at half time. (We thought that she had a weird look going on… like was she trying to look sexy? or angry? or fierce?) Then once the power went out in the 3rd quarter, we went to another beach for a picnic. I did make hot chocolate brownies- and they were delicious!

  13. Kristina says:

I think of nachos as the perfect after-a-long-hike or after-ski-day food. Or maybe just with a beer…

  14. Emily says:

I love nachos and that picture of nachos is making my mouth water just looking at it! I have both a sweet tooth and a salt tooth, but when you hold my feet to the fire, the salt tooth wins out. I’m all about chips and any kind of dip – especially guacamole and hummus. YUM!

  15. …thanks. I am drooling over the nachos. I wonder if I can make those today.. My bf has been wanting to make a healthier version of taco bell tacos with the shells.. im HUNGRY now lol

favorite party food? does boneless wings count? 🙂

  16. I’ve been thinking about Mexican food since you mentioned the nachos yesterday. Nom.

  17. Beth says:

I love the festive foods! And those vegan nachos look amazing. I am definitely going to have to check out that vegan nacho cheese. Where can I find it?

  18. Queenie says:

I think I need to eat some mexican food right now because you’re nachos look awesome. Random fact: my classroom theme at the beginning of the year was tacos (taco’bout a great class). I made taco with each kids name on it, using tissue paper and plates. Perhaps that should’ve been the decoration for your party last night! 🙂
