Vegan Saturday I | Meal planning with my vegetarian spouse

I started following a vegan lifestyle (diet-wise) this Monday, June 15th. I am going to do a series of “Vegan Saturdays” posts to answer all of your questions, rather than create one super long post. Thanks all for your thoughtful questions! If you think of any other questions, you can ask them here, or on the original Q&A post.

I know some people could probably care less about veganism (understandable), so I chose Saturdays for these posts since readership is usually lower anyway. Along with my marathon training posts on Sundays, you can just skip over the entire weekend if neither is of interest to you. Easy peasy!

I was going to begin by addressing CournteyInControl’s “What made you decide to go vegan?” but I thought I could better answer Erin’s question, after our dinner tonight. So I will probably save Courtney’s question for next week.

First though, I must say, it is my goal to permanently follow a vegan lifestyle, but if I find my health is negatively affected, I will have to re-evaluate my diet. On to the first question…

Erin asked, “Will Steven become vegan also? How will this affect meal planning/cooking?”

Steven will not be becoming vegan, at least today. But he is on board with helping me eat vegan.

Most of the meals we eat on a day-to-day basis at home already are vegan – boca sandwiches with fresh veggies, salads, pasta, beans and rice, etc. Where the problem comes in at home is with pre-packaged foods. A lot of items we didn’t think would have eggs or dairy in them do. Last night we wanted to make a homemade pizza, but all of our pizza crust mixes had milk in them, so we couldn’t. However, I picked up a dairy and egg free mix today, and it worked out wonderfully!

Which plate would you take?

I think eating out will be an issue AT FIRST. We usually visit one of three places – El Famous Burrito (his favorite), Red Robin (my favorite) and Subway (our healthy favorite). Okay, and let’s throw Sweet Tomatoes in there too. At El Famous, I get the Chilles Rellenos (cheese). At Red Robin, it’s the Royal Red Robin Burger (cheese and egg). At Subway, my sandwich is pretty much vegan, but I need to check and see what’s in the bread.

I don’t want to ruin the eating out experience for him (or anyone), so I need to do some research and figure out what I CAN order before we go out. I can get a burrito instead of Chilles Rellenos, and ask for my burger without cheese and egg. Hopefully it won’t be too big of a deal. We don’t eat out often, but when we do, I don’t want it to be stressful for him or me!

I think making this change means that meal planning requires actual planning. It’s won’t be as easy to throw things together anymore, at least at first. But, we will figure it out, together.

10K numero uno: Take a Step for Kids / Jillian Michaels Radio Show

I ran the Take a Step for Kids 10K today in Libertyville, IL – my longest race to date! So of course, that means I set a new personal record by default. Yay!

The weather was absolutely perfect – clear blue skies, sun and 60° F by the time the race started at 9:00 (it later warmed up to 75° F!).

Originally, Steven and I were going to run this 10K together, but his ankle has been bothering him all week, so he thought it was best if he didn’t run it. Please send some good thoughts his way! We want to be in optimal condition for our half marathon on May 2nd!

I ran the first three miles of the race at 8:00 minute mile pace. Then I slowed down a bit when the course went from asphalt to dirt (see photo below) and I began to encounter hills.

It was nice to see Steven halfway through the race. Of course, I just had to be messing with my MP3 player in the photos!

My fourth mile was around 8:30. And I think the last two were around 9:00 or 9:25. Boo! But I finished with a time of 51:00 which was much lower than my goal of 54:00, and I also came in second place for my age group!

One of my favorite restaurants, Sweet Tomatoes, was a sponsor, so they had tables set up with their yummy muffins as well as bowls of pasta and salads! I passed on the food, but did stop to pose with the giant tomato (who looked like the Kool-Aid guy to me!).

As if this post wasn’t already long enough, I have to mention: I have actually been listening to some of Jillian Michael’s Talk Radio Shows, and I am shocked to admit… I am really liking them! I feel like she is upbeat and inspiring, but real and relatable (not a word?) on the show. And I love the segment where she answers listener’s questions.

During the 4/12 show she talked about methods for managing stress. Even though these methods may seem obvious to you, thinking about trying them really gave me hope that it would help with my anxiety. I’ve put the methods in an extended entry below. I know #3 is a huge help for me!

Behaving at the Buffet

Every once in awhile, Steven and I go to Sweet Tomatoes, our favorite buffet. We like it because they have a huge salad bar right when you walk in – that is the focus of the place. You make your salad and pay, then there is a little baked goods counter, soup counter, pasta counter, and sweets counter.

I have such a hard time going there.

Even though I make my healthy salad, and steer clear of the baked goods and grab a little dish of pasta… I just gobble it down. I get into some weird “buffet-dining” mentality that I need to eat my food as fast as possible so I can get up for more. And I always get more.

I’ve actually gotten better at eating slower at Sweet Tomatoes (and at home, and other restaurants), but every time I go there, I eat a lot more than I should. I don’t get a stomach ache or anything like that, but I just eat too much. Because it’s a buffet. And I feel all weird and rushed. And I feel deprived. And sad. Sad that I am not eating as much as I used to at a buffet, before I started caring about my health.

Today I was thinking about what it would be like to stop counting calories and just listen to my hunger. What would happen if I ate when I was hungry, rather than sticking to the allotted meals and snacks I have set up for myself throughout the day? Would I eat less? Would I eat more? Would I lose weight? Would I gain weight?

I really want to do that – stop counting, stop worrying. Stop thinking about it. But I don’t think I am ready. I really don’t think I am ready to live that guilt-free of a life. I have been having some binging issues lately. I’ve been avoiding some emotions, and eating them out instead. I feel that, until I conquer emotional eating, I may not be ready to listen to my hunger, because I am not really listening to it. I am letting my emotions dictate my eating patterns. And that just feels awful.

I am just going to see how the next few weeks go. This is a stressful time for me. I’d still like to lose some weight, and I think counting calories may be the way to do that. Oh, and avoiding the buffet.

On the side: PLEASE PLEASE PLEASE someone help me with wordpress. I could not login to my admin panel tonight for a very long time. It just kept resetting every time I entered my login and password. I tried a million things to fix it, and nothing worked very well. I am not sure what finally got it.
