Vegan “Meatloaf” / Trying New Recipes

Many of you had “try one new recipe a week” listed as a New Year’s Resolution and I thought that was SO FUN! Although we don’t do it as frequently, Steven and I love trying new recipes. We both subscribe to food blogs and share recipes with each other via google reader. Our favorite website for finding recipes has been VegWeb.com. I bet most of the recipes we’ve tried have come from there!

Where do you look for new recipes? What makes you want to try a new recipe?

I usually want to try a new recipe if it lists some of my favorite ingredients, is accompanied by a beautiful photo, or if it is something I have been craving for awhile!

Our latest adventure, Vegan “Meatloaf,” did feature two of our favorite ingredients (when mixed together) – lentils and rice. Since we had most of the ingredients listed (we had to use soy sauce, red wine vinegar and onion powder in place of Worcestershire sauce and basil and thyme instead of Herbes de Provence) we decided to give it a go.

Hmm.

We both think it needs some work. It was definitely edible and filling. And it had interesting flavor and texture. It just wasn’t quite “there” yet.

Ugh. I guess “Meatloaf” (no matter how perfect the recipe) just isn’t worth two and a half hours of prep/cooking. We had to make our own breadcrumbs,

individually cook the lentils, rice and veggies,

mash them all up and form a “loaf,”

make a sauce for the top,

and bake the damn thing.

So, needless to say, the Vegan “Meatloaf” will probably not make it into our meal rotation, but it may be worked on some more.

It was fun to try something new, that’s for sure!

Vegan “Chicken” and Biscuits

Damn. Vegan “Chicken” and Biscuits make awesome leftovers*. Like, “I can’t stop eating them and am going to turn into a tub-tub, thank goodness that’s the last of them” awesome. Steven’s cooking is so good, I almost always feel like this with his leftovers. We were thinking about making the Vegan “Chicken” and Biscuits for Erin and Jason’s visit tonight, so we tried them out on Wednesday.

Steven followed this recipe for “Chicken” and Dumplings starting at the fourth step. We used biscuits instead of dumplings.

  • Saute onion, celery and mushrooms (we added) in margarine until soft
  • Add flour, celery salt and pepper to make a thick paste
  • Add veggie broth and bring to a boil
  • Add carrots, faux chicken and bay leaf (We used a box of Heartline’s “Chicken” Fillet** for the “chicken.”)
  • Reduce heat, simmer 20 mins, stirring often
  • Pour this awesome soupy mix on your biscuits
  • Nom nom nom away, lick plate clean

Steven excitedly told me that the biscuits had a “surprise” ingredient (before I tried one, without the soupy mix). After a lot of guesses (some silly and some serious), Steven gave me a hint that he thought the biscuits tasted like the ones you get at Red Lobster. I immediately knew what the “secret” ingredient was then – Nutritional Yeast. After my last fiasco with it, I was worried about the biscuits, but he was right, they DO taste like the ones at Red Lobster, and they taste great! (Steven used this recipe for the biscuits. He used 1/4 c. nutritional yeast instead of 1/3 c., and for the “1 teaspoon of dried herbs” used 1/2 tsp. garlic then for the other half teaspoon he used a pinch of rosemary, thyme and dill.).

We loved this recipe – especially during this time of year. It’s such a hearty and filling dish! It makes you feel all warm and good inside. And it’s got that creamy thing going on, with a little bit of a soft chewy biscuit. Yum yum. But since we couldn’t come up with good sides (besides green beans), we are making something else for our guests tonight. Ha! At least we tried something new and it turns out we love it. We*** will definitely be making it again. We both said it reminded us of when our mothers made chicken and biscuits. And Steven suggested turning it into a pot pie…

Friday Question #64

According to this article, most people DO NOT follow a recipe. But I almost always DO. I’m not confident enough in the kitchen not to!

Steven, on the other hand, only uses recipes and cookbooks for inspiration. Sometimes when he wants to try something new, he’ll look at a bunch of recipes for ideas, then write his own. But sometimes, he just improvises! He’s a true chef.

Some administrative stuff: On Saturday, I put up a poll asking where recipes should be posted, and the majority voted for a new recipes category, so I am adding that today. In it, you will find Fruit Pizza, Swiss Apple Pie, Banana Donuts, Granola Bars (re-visit the comments section for an update on the recipe!), the Pad Siew teaser and Christina’s Rainbow Cake. Most of the recipes for these items are posted in the comments section or in a link in the post. In the future, I will post the recipes in an extended post.

I’ve also been bookmarking a few recipes to try in the future: Denise’s Pumpkin Spice Muffins, Chocolate Covered Katie’s 24-Carrot Cake Muffins, Nicole’s Cinnamon Bun Muffins and Cathy’s Gluten-Free Brownies. Yes, I like to bake sweets! And I love to share them with my coworkers or Steven’s, so we don’t eat them all.

Banana donuts and the 30 Day Shred

I participate in an alternate work schedule at my office, so every other week, I get a Friday off. I use it as a day to get a lot of errands done so Steven and I can have a relaxing weekend. Yesterday, I ran 5 miles, went to the dentist*, went  shopping for a suit (FAIL), picked up a DVD (more on that below) and went grocery shopping (at 2 different stores) all before 1 pm!

Then I came home, ate lunch, walked Data, got the mail, read blogs… and passed out on the couch for an hour and a half. Oops!

Anyway, I decided to surprise Steven by getting up early and making him some of those banana donuts**  different people (Meghann and Mica) in the blogosphere have been making. Here’s the recipe, which I halved, making six donuts.

One minor problem with the recipe – it calls for egg whites, and I started mixing everything up before I remembered we used the rest of the eggs for Thursday night’s dinner. I had a little mini-panic and contemplated giving up and pouring the batter into the trash, then decided to improvise by using an extra tablespoon and a half of oil. Not the healthiest alternative, but it worked. The only other way I altered the recipe was by putting in a tad of banana extract flavoring.

I really wanted them to look like donuts, so I put all of the batter into a large plastic bag, then cut off the edge of the bag and squeezed the batter through to shape into donuts.

I am estimating that one has approximately 200 calories.

I had to jump on the treadmill and run my 5 miles before I could try one. I was a bit worried they wouldn’t taste that good, but Steven LOVED them! He even took a couple to work so I could live up to my reputation as the wife who bakes things (formerly, “the wife who bakes cookies“). And I tried one after my shower – I LOVED them too! They make a very good breakfast, and are not too sweet.

I picked up Jillian Michael’s 30 Day Shred DVD while running my errands. I’ve been reading a lot of health and fitness blogs lately and I think about 50% of them are using this DVD to work out at home! I can’t wait to try it today, with Steven!

*I am SO EXCITED to have dental insurance now. I love going to the dentist. I hadn’t been since September of 2002. A lot has changed since then! Now they can take photos of your teeth inside your mouth and show it to you!

Surprise – I eat too fast!

Last night, Steven (and I) made homemade veggie patties.

They took about 45 minutes to make. We had to chop up carrots, broccoli, cauliflower, green onion, zucchini and celery, then add spices to that mix and saute it all in a pan. We eventually mixed in some flour until it got to the right consistency, then took it all out to form into patties and cook like normal veggie burgers.

Every time I spend a lot of time in the kitchen cooking something (okay, helping Steven cook something, I am only a sous chef, afterall), I think about how fast I eat. Last night was no different. Even though the pattie was big, and a little bit squishy and falling apart… I still scarfed it down. We had our veggie patties with fresh broccoli, and I ate it all so fast, I got a little bit of an upset stomach.

Okay, I don’t just think about this problem when something takes a long time to prepare. I think about it a lot. And have probably mentioned it before.

No matter where I am, no matter what I am eating, I scarf it down. I eat so fast, I am usually the first one done. I have to consciously try to eat slow in restaurants with friends so I don’t finish too soon and feel like an idiot.

I’ve read all the tips on how to slow down while eating:

  • Eat at the dining room table
  • Use a fork and knife
  • Put your silverware down between each bite
  • Chew each bite 30 times before swallowing
  • Don’t put more food into your mouth until it’s empty
  • Chat to others at the table
  • Turn off the tv/computer while eating
  • Pay attention to the taste and texture while you’re eating
  • Avoid eating on the run
  • Eat foods that require some work
  • Use chopsticks!

But even though I know all of these tricks, I don’t follow them. Even though I sit down at every meal, thinking “Today’s going to be the day! I am going to have a nice, long, slow meal!” – it never is.

I know the benefits of eating slower. I wouldn’t get an upset stomach (although that rarely happens). I might eat less, because my stomach figures out I am full sooner than normal. I might enjoy the food.

I might actually develop a normal relationship with food!

If I don’t approach each meal acting like it is going to be my last, I may be able to take away some of the power that food has over me. I might eat for enjoyment. I might eat to fuel my body.

This has been a problem I’ve had all my life. Somehow, I feel like now, I can tackle it and overcome it. I would love to sit down at Thanksgiving dinner with a plate full of delicious food, taking small bites and savoring each one (and maybe not going back for seconds!).

I’ll let you know how it all goes.
